  • 4 medium sweet potatoes (about 2 lbs)
  • 4 cups fresh spinach
  • 8 oz cremini mushrooms, chopped
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 4 oz cream cheese (regular or low-fat)
  • 1/4 cup vegetable broth
  • 1 tsp agar-agar powder
  • 2 tsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and prick them with a fork.
  2. Place pricked sweet potatoes on a baking sheet lined with parchment paper. Roast for about 45-50 minutes until tender.
  3. In a skillet over medium heat, add olive oil. Sauté diced onions until golden brown, then add minced garlic and chopped mushrooms. Cook until mushrooms are tender.
  4. Stir in fresh spinach until wilted, then mix in cream cheese and vegetable broth until creamy.
  5. Sprinkle in agar-agar powder while stirring continuously to thicken the filling. Cook for an additional minute, then remove from heat.
  6. Once sweet potatoes are roasted, slice them open lengthwise and fill with the creamy mushroom and spinach mixture. Return to the oven for a few minutes to warm through before serving.
