- 1 cup plain Greek yogurt (240g)
- 2 tbsp freshly squeezed lemon juice
- ½ cucumber, grated or finely chopped (about 75g)
- 1 tbsp fresh dill (optional)
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash and cut potatoes into wedges about half an inch thick.
- In a bowl, toss potato wedges with olive oil, oregano, garlic powder, salt, and pepper until evenly coated.
- Spread wedges in a single layer on the baking sheet and bake for 25-30 minutes, flipping halfway through until golden brown and crispy.
- While the wedges bake, mix Greek yogurt, lemon juice, cucumber, salt, and dill in a separate bowl for the sauce.
- Serve hot potato wedges drizzled with yogurt sauce or on the side for dipping.
