  • 4 cups fresh spinach leaves
  • 1 cup dried cranberries
  • 1 red bell pepper, chopped
  • 3 green onions, sliced
  • 2 tbsp toasted sesame seeds
  • ¼ cup low-sodium soy sauce
  • 2 tbsp honey or maple syrup
  • 2 tbsp freshly squeezed lemon juice

Instructions

  1. Grill or pan-sear chicken breasts over medium-high heat for 6-7 minutes per side until cooked through (internal temperature should reach at least 165°F). Let the chicken rest for five minutes before slicing.
  2. In a large bowl, combine fresh spinach, chopped bell pepper, sliced green onions, diced chicken, and dried cranberries.
  3. In a separate bowl, whisk together soy sauce, honey or maple syrup, and lemon juice until well blended.
