Ingredients

  • 1 cup diced English cucumbers
  • 2 cups quartered ripe vine tomatoes
  • 1/4 cup thinly sliced red onion
  • 1/2 cup pitted Kalamata olives
  • 3/4 cup crumbled feta cheese
  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Wash all produce thoroughly. Dice cucumbers into bite-sized pieces and quarter the tomatoes.
  2. Thinly slice the red onion; rinse under cold water if sensitive.
  3. In a large bowl, combine cucumbers, tomatoes, red onion slices, and olives gently.
  4. Crumble or cube feta cheese over the top.
  5. Drizzle olive oil and vinegar over the salad; season with salt and pepper. Toss gently to combine.
  6. Chill in the fridge for about 10 minutes before serving.
