- 1 cup granulated sugar (divided: 1/4 cup for crust and 3/4 cup for filling)

- 2 tbsp cornstarch
- 1/2 cup granulated sugar (for meringue)
- 1 tsp agar-agar powder
- Edible lilac flowers for decoration
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix flour, 1/4 cup sugar, and cold butter until crumbly. Press into mini tart pans and bake for 15 minutes until golden.
- For the lemon filling, whisk together lemon juice, zest, 3/4 cup sugar, and eggs until smooth. Stir in cornstarch. Pour into baked crusts and bake for another 20 minutes until set.
- To prepare the meringue, beat egg whites until frothy; gradually add sugar until stiff peaks form. Dissolve agar-agar in water over low heat; mix into egg whites.
- Spoon meringue onto cooled tarts and brown lightly with a kitchen torch or broiler.
- Chill before serving for the best flavor.
