  • 1 ripe fresh pineapple (about 2 cups diced)
  • 1 cup mixed bell peppers (red and green)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups water
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup freshly squeezed pineapple juice
  • 1 tsp ginger powder
  • Salt and pepper to taste
  • Cooking oil for sautéing

Instructions

  1. Dice chicken breasts into bite-sized pieces. Chop the pineapple, bell peppers, onion, and mince the garlic.
  2. In a pot, bring water to a boil. Add rice and a pinch of salt; reduce heat to low, cover, and simmer for 15-20 minutes until fluffy.
  3. In a large skillet over medium heat, add oil. Sauté onions until translucent (about 5 minutes), then add bell peppers and garlic; cook until fragrant.
  4. Add diced chicken to the skillet. Season with salt, pepper, and ginger powder; cook until browned (about 6 minutes).
  5. Stir in pineapple chunks, soy sauce, and pineapple juice; let simmer for another 5 minutes.
  6. Fluff cooked rice and combine it with the chicken mixture or serve individually on plates.
