  • 1 lb medium shrimp (peeled and deveined)
  • 1 cup white rice (jasmine or long-grain)
  • 1 cup bell peppers (sliced)
  • 1 cup cucumbers (diced)
  • 1 cup carrots (julienned)
  • 2 green onions (sliced)
  • ½ cup mayonnaise
  • 2 tbsp sriracha
  • 1 tbsp sesame oil
  • 1 tbsp sesame seeds (for garnish)

Instructions

  1. Rinse rice under cold water until clear. Combine rice with 2 cups water in a saucepan; bring to a boil and simmer for 18-20 minutes until tender.
  2. Heat sesame oil in a skillet over medium-high heat. Season shrimp with salt and pepper; cook for approximately 3 minutes on each side until pink and opaque.
  3. Chop bell peppers, cucumbers, and carrots; mix them in a bowl.
  4. In a small bowl, combine mayonnaise and sriracha to create the spicy mayo.
  5. Fluff the cooked rice and layer it in bowls with shrimp and mixed veggies.
  6. Drizzle spicy mayo over the top and garnish with sesame seeds.
