- In a large bowl, mix melted butter with granulated and brown sugars until smooth. Add eggs one at a time, followed by vanilla and red food coloring; stir to combine.
- In another bowl, whisk together flour, cocoa powder, and salt. Gradually fold into the wet mixture until just combined.
- For the cheesecake layer, beat cream cheese until smooth. Mix in sugar and vanilla until creamy.
- Pour half the brownie batter into the pan. Dollop spoonfuls of cheesecake mixture on top and swirl gently with a knife. Add remaining brownie batter.
- Bake for 30-35 minutes until a toothpick comes out mostly clean. Cool completely before cutting into squares.
