  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 2 tbsp red food coloring
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, mix melted butter with granulated and brown sugars until smooth. Add eggs one at a time, followed by vanilla and red food coloring; stir to combine.
  3. In another bowl, whisk together flour, cocoa powder, and salt. Gradually fold into the wet mixture until just combined.
  4. For the cheesecake layer, beat cream cheese until smooth. Mix in sugar and vanilla until creamy.
  5. Pour half the brownie batter into the pan. Dollop spoonfuls of cheesecake mixture on top and swirl gently with a knife. Add remaining brownie batter.
  6. Bake for 30-35 minutes until a toothpick comes out mostly clean. Cool completely before cutting into squares.
