Description

Chicken Zucchini Stir Fry is a vibrant and flavorful dish that combines tender chicken, fresh zucchini, and colorful bell peppers in a savory sauce. Perfect for busy weeknights or casual gatherings, this quick stir fry is both satisfying and nutritious.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1 lb), sliced thinly
  • 2 medium zucchinis, chopped into bite-sized pieces
  • 1 cup bell peppers (any color), chopped
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 1/2 cup low-sodium chicken broth
  • 1 tbsp cornstarch mixed with 2 tbsp cold water

Instructions

  1. Prepare your ingredients by slicing the chicken and chopping the vegetables.
  2. In a bowl, whisk together soy sauce, chicken broth, garlic, ginger, and cornstarch mixture until smooth.
  3. Heat oil in a large skillet or wok over medium-high heat. Add the chicken in a single layer and cook for about 5 minutes until golden brown.
  4. Add zucchini and bell peppers to the pan. Stir-fry for another 5 minutes until veggies are crisp-tender.
  5. Pour the prepared sauce over the stir fry and stir until everything is well coated and bubbling. Cook for an additional minute to thicken slightly.
  6. Serve hot over steamed rice or noodles.
