  • 1 lb ground turkey
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 2 garlic cloves, minced
  • 1 small onion, finely chopped
  • 2 tbsp olive oil
  • 1/2 cup plain bread crumbs
  • Salt and pepper to taste
  • 1 cup full-fat Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 tbsp lemon juice
  • 2 tbsp fresh dill, chopped

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. In a large bowl, combine ground turkey, parsley, mint, garlic, onion, olive oil, bread crumbs, salt, and pepper. Mix until well combined.
  3. Form the mixture into golf ball-sized meatballs and place them on the prepared baking sheet.
  4. Bake for 20-25 minutes or until golden brown and cooked through.
  5. While the meatballs bake, prepare the tzatziki by mixing Greek yogurt, cucumber, lemon juice, dill, salt, and pepper in a bowl until smooth.
  6. Serve the meatballs drizzled with tzatziki sauce.
