  • 2 medium fresh zucchini (about 400g), sliced into half-moons
  • 2 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1/4 cup vegetable broth
  • 1 tbsp toasted sesame seeds (for garnish)
  • 2 tbsp chopped green onions (for garnish)

Instructions

  1. Wash zucchini and slice into half-moons, about half an inch thick.
  2. Heat a large skillet over medium-high heat and add sesame oil.
  3. Sauté minced garlic for about one minute until fragrant.
  4. Add zucchini slices and stir occasionally for about five minutes until tender-crisp.
  5. Pour in soy sauce and vegetable broth, stirring to combine, and simmer for two more minutes.
