  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1 cup bell peppers (any color), diced
  • 6 oz turkey salami, sliced
  • 1 cup provolone cheese, shredded
  • 1/2 cup pepperoncini peppers, sliced
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar

Instructions

  1. Wash and chop all fresh produce: romaine lettuce into bite-sized pieces; dice cherry tomatoes and cucumbers; slice red onion thinly; chop bell peppers.
  2. In a large mixing bowl, combine the chopped vegetables with turkey salami and shredded provolone cheese. Add pepperoncini peppers for an extra kick.
  3. In a separate bowl, whisk together olive oil and red wine vinegar until well combined. Optionally add dried oregano or Italian seasoning.
  4. Pour the dressing over the salad mixture and toss gently until everything is evenly coated.
  5. Serve immediately or chill in the fridge for about 30 minutes to let the flavors meld.
