Description

Pizza Pot Pies are a warm and comforting twist on traditional pizza, encased in a flaky, golden crust. These delightful mini pot pies are filled with tender chicken, gooey cheese, and vibrant vegetables, making them perfect for cozy dinners or impressing guests. They are quick to assemble and fully customizable based on your favorite toppings, ensuring a delicious meal every time.


Ingredients

  • 2 pre-made pie crusts
  • 1 cup cooked chicken (shredded or diced)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup fresh mushrooms (sautéed)
  • 1/2 cup tomato sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil

Instructions

  1. Preheat oven to 400°F (200°C) and allow pie crusts to reach room temperature.
  2. In a large bowl, mix shredded chicken, bell peppers, sautéed mushrooms, tomato sauce, oregano, basil, and half the cheese.
  3. Roll out pie crusts and cut circles slightly larger than ramekins. Place one circle in each ramekin and fill with the chicken mixture. Top with remaining cheese and cover with another pie crust circle. Seal edges by crimping.
  4. Cut slits in the tops for steam vents. Bake on a baking sheet for 25-30 minutes until golden brown.
  5. Let cool for 5 minutes before serving.
