Seafood stuffed potatoes are a scrumptious blend of fluffy baked russet potatoes filled with a creamy medley of shrimp and imitation crab, accented by green onions and garlic.   • 4 medium russet potatoes
  • 1 cup cooked shrimp, peeled and deveined
  • 1 cup imitation crab meat, chunks
  • 8 oz cream cheese, softened
  • 1/4 cup green onions, chopped
  • 1 tsp garlic powder
  • 1 cup shredded cheese (mozzarella or cheddar)

Instructions

  1. Preheat the oven to 400°F (200°C). Wash the russet potatoes thoroughly.
  2. Bake the potatoes directly on the oven rack for 45-60 minutes until tender when pierced with a fork.
  3. While baking, mix green onions, shrimp, crab meat, cream cheese, garlic powder, and half of the shredded cheese in a bowl until combined.
  4. Once cool enough to handle, slice the potatoes lengthwise and scoop out some flesh into the filling mixture. Mix until creamy.
  5. Stuff the potato skins with the seafood filling and top with remaining shredded cheese.
  6. Return stuffed potatoes to the oven for another 15-20 minutes until heated through and golden on top.
