  • 8 oz cream cheese (softened)
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
  3. In another bowl, whisk together the flour, baking soda, and salt. Gradually mix this dry mixture into the wet ingredients until just combined.
  4. In a separate bowl, mix cream cheese with powdered sugar until smooth; gently fold in chopped strawberries.
  5. Scoop tablespoons of cookie dough onto prepared sheets, flatten slightly, add about a teaspoon of cheesecake filling in the center, and top with another scoop of dough.
  6. Bake for 10-12 minutes until golden around edges but soft in the center. Cool on sheets for five minutes before transferring to wire racks.
