  • 4 cloves fresh garlic, minced
  • 1/2 cup sweet chili sauce (120ml)
  • 1/4 cup low-sodium soy sauce (60ml)
  • 2 tbsp fresh lime juice (30ml)
  • 1 cup full-fat coconut milk (240ml)
  • Zest of 1 lime
  • Cooked rice or quinoa for serving

Instructions

  1. Trim chicken breasts and cut them into bite-sized pieces.
  2. In a bowl, mix sweet chili sauce, soy sauce, minced garlic, and lime juice. Add the chicken and marinate for at least 30 minutes.
  3. Heat oil in a skillet over medium-high heat. Cook marinated chicken until golden brown and cooked through, about 6-8 minutes.
  4. In a saucepan over low heat, combine coconut milk and lime zest until warmed through.
