  • 1/2 cup breadcrumbs (plain or seasoned)
  • 1/4 cup green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp rice vinegar
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix ground chicken, breadcrumbs, green onions, garlic, ginger, salt, and pepper until just combined.
  3. Shape the mixture into bite-sized meatballs (about 2 tablespoons each) and place them on the prepared baking sheet.
  4. Bake for about 20 minutes or until golden brown and cooked through.
  5. In a saucepan over medium heat, combine soy sauce, brown sugar, rice vinegar, ginger, garlic powder (if using), and cornstarch mixture. Stir until thickened.
