  • 1 (6 oz) salmon fillet
  • 1 cup short-grain sushi rice
  • 3 tbsp teriyaki sauce (plus more for drizzling)
  • 2 green onions, finely chopped
  • 2 sheets nori seaweed, cut into strips
  • 1 tbsp toasted sesame seeds
  • 4 oz cream cheese, softened
  • 1 tsp agar-agar powder (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease an oven-safe baking dish.
  2. Rinse the sushi rice under cold water until clear and cook according to package instructions.
  3. Season the salmon with salt and pepper and place it on a parchment-lined baking sheet. Drizzle with 1 tablespoon of teriyaki sauce and bake for 15-20 minutes until flaky.
  4. In a bowl, mix cooked rice with softened cream cheese and half of the remaining teriyaki sauce.
  5. Spread half of the rice mixture in the baking dish, layer flaked salmon on top, followed by the remaining rice mixture. Drizzle with more teriyaki sauce.
  6. Bake for another 15-20 minutes until heated through. Top with green onions and sesame seeds before serving.
