  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 cup crumbled feta cheese
  • 1 cup dried cranberries
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 3 tbsp extra virgin olive oil
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Rinse the canned chickpeas under cold water and pat them dry.
  2. In a small bowl, whisk together the lemon juice, olive oil, honey or maple syrup, salt, and pepper until well combined.
  3. In a large bowl, mix the chickpeas, cranberries, and feta cheese. Pour the lemon vinaigrette over the mixture and toss gently until evenly coated.
