  • 2 large carrots (about 200g), cut into sticks
  • 2 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp freshly cracked black pepper
  • 150g creamy burrata cheese
  • 2 tbsp fresh basil or parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and prepare beets and carrots; toss them with olive oil, sea salt, and black pepper in a large bowl.
  3. Spread the veggies on the prepared baking sheet in a single layer. Roast for 30-35 minutes until tender and caramelized.
