Instructions

  1. Wash and cut cauliflower into bite-sized florets.
  2. Blanch the florets in boiling salted water for 3 minutes; then cool in an ice bath.
  3. Chop the cherry tomatoes, cucumber, red onion, and parsley.
  4. In a large bowl, whisk together lemon juice, olive oil, salt, and pepper.
  5. Combine cooled cauliflower and veggies with the dressing; toss gently until coated.
  6. Chill in the refrigerator for at least 30 minutes before serving.
