  • 3 large eggs, separated
  • 1/4 cup granulated sugar, divided
  • 1 cup heavy cream, cold

Instructions

  1. Melt the dark chocolate in a microwave-safe bowl in 20-second intervals until smooth. Let it cool slightly.
  2. In a separate bowl, whisk egg yolks with half of the sugar until pale and fluffy. Fold in the melted chocolate until well combined.
  3. In another clean bowl, beat egg whites until soft peaks form. Gradually add the remaining sugar and whip until stiff peaks form.
  4. In a fourth bowl, whip the cold heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture.
  5. Carefully fold in the beaten egg whites until fully incorporated without deflating the mixture.
  6. Spoon or pipe mousse into serving cups and chill for at least two hours before serving.
