Ingredients

  • 1/2 head green cabbage, finely shredded
  • 2 medium carrots, shredded
  • 2 crisp apples (Granny Smith or Honeycrisp), chopped
  • 1 cup dried cranberries
  • 1/2 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste
  • 1/2 cup walnuts (optional), roughly chopped

Instructions

  1. Finely shred the cabbage and carrots.
  2. Core and chop the apples into small pieces.
  3. In a large bowl, combine cabbage, carrots, apples, cranberries, and walnuts.
  4. In another bowl, whisk together mayonnaise, apple cider vinegar, honey/maple syrup, salt, and pepper until smooth.
  5. Pour dressing over the veggie mixture and toss until well-coated.
  6. Chill in the refrigerator for at least an hour before serving to allow flavors to meld.
