Ingredients

  • 2 cans (15 oz each) canned chickpeas, rinsed and drained
  • 1 cup crumbled feta cheese
  • 1 cup dried cranberries (unsweetened if preferred)
  • 1/4 cup fresh lemon juice
  • 1/3 cup extra virgin olive oil
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the canned chickpeas in a colander.
  2. In a small bowl, whisk together fresh lemon juice, olive oil, honey or maple syrup, salt, and pepper until combined.
  3. In a mixing bowl, combine the chickpeas with crumbled feta cheese and dried cranberries. Pour the vinaigrette over the mixture and gently toss until well coated.
  4. Taste and adjust seasoning if necessary.
  5. Optional: Chill in the refrigerator for about 30 minutes to enhance flavors.
  6. Serve in a bowl or on individual plates, drizzling any remaining vinaigrette on top.
