- 1 cup crumbled feta cheese
- 1 cup dried cranberries (unsweetened if preferred)
- 1/4 cup fresh lemon juice
- 1/3 cup extra virgin olive oil
- 1 tbsp honey or maple syrup
- Salt and pepper to taste
Instructions
- Rinse and drain the canned chickpeas in a colander.
- In a small bowl, whisk together fresh lemon juice, olive oil, honey or maple syrup, salt, and pepper until combined.
- In a mixing bowl, combine the chickpeas with crumbled feta cheese and dried cranberries. Pour the vinaigrette over the mixture and gently toss until well coated.
- Taste and adjust seasoning if necessary.
- Optional: Chill in the refrigerator for about 30 minutes to enhance flavors.
