  • 1 lb flank or sirloin steak
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1 medium red onion
  • 4 cups romaine or mixed greens
  • 1 cup fresh cilantro
  • 1 ripe avocado
  • 2 tbsp freshly squeezed lime juice
  • 3 tbsp olive oil (divided)
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Marinate the steak by mixing olive oil, chili powder, cumin, salt, and pepper in a bowl. Coat the steak well and let it sit.
  2. Heat a skillet over medium-high heat. Add olive oil and sauté sliced bell peppers and red onion until tender-crisp (about 5 minutes).
  3. In the same skillet, sear the marinated steak for about 3-4 minutes per side for medium-rare; adjust cooking time as needed.
  4. Blend avocado, cilantro, lime juice, olive oil, salt, and pepper in a food processor until smooth to create the dressing.
  5. Chop lettuce and layer it on plates; top with sautéed vegetables and slices of steak.
  6. Drizzle with cilantro avocado dressing before serving.
