  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar (divided)
  • 16 oz cream cheese, softened
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp instant coffee granules
  • ½ cup sour cream

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press this mixture into the bottom of a springform pan to form the crust.
  2. In another bowl, beat softened cream cheese with ½ cup granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and instant coffee granules.
  3. Mix in sour cream until fully incorporated.
  4. Pour the filling over the crust and smooth the top with a spatula. Bake for 50-60 minutes until edges are set but center is slightly jiggly.
  5. Turn off the oven and let cool inside for an hour before transferring to the refrigerator to chill for at least four hours or overnight.
