  • 8 ounces fettuccine or penne pasta
  • 1 cup full-fat coconut milk
  • 1 cup mixed bell peppers, chopped (red and yellow)
  • 4 cloves garlic, minced
  • 3 scallions, chopped
  • 2 teaspoons curry powder
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Cook the pasta: Boil salted water in a large pot, add pasta, and cook until al dente. Drain and set aside.
  2. 2. Sauté shrimp: In a skillet over medium heat, heat olive oil. Add shrimp and sauté until pink and opaque (about 3 minutes per side). Remove from skillet.
  3. 3. Add vegetables: In the same skillet, add garlic, bell peppers, and scallions. Stir-fry until softened (about 4 minutes).
  4. 4. Create sauce: Pour in coconut milk, curry powder, lime juice, salt, and pepper. Simmer for about 5 minutes until slightly thickened.
