- 1/4 cup granulated sugar
- 1/2 cup unsalted butter (softened)
- 1 large egg
- 1/2 cup peanut butter (smooth or crunchy)
- 1/2 cup fruit jam (your choice)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, whisk together oats, flour, baking soda, brown sugar, and granulated sugar.
- In another bowl, cream together softened butter and peanut butter until smooth. Add the egg and mix well.
- Gradually combine the dry ingredients with the wet mixture until just combined.
- Scoop tablespoon-sized amounts of dough onto the prepared baking sheets, spacing them two inches apart. Bake for 10-12 minutes until lightly golden around the edges.
- Allow to cool slightly before spreading peanut butter on one cookie half and topping it with jam. Place another cookie on top to form a sandwich.
