Description

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 3/4 cup brown sugar (packed)
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 1 large egg
  • 1/2 cup peanut butter (smooth or crunchy)
  • 1/2 cup fruit jam (your choice)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together oats, flour, baking soda, brown sugar, and granulated sugar.
  3. In another bowl, cream together softened butter and peanut butter until smooth. Add the egg and mix well.
  4. Gradually combine the dry ingredients with the wet mixture until just combined.
  5. Scoop tablespoon-sized amounts of dough onto the prepared baking sheets, spacing them two inches apart. Bake for 10-12 minutes until lightly golden around the edges.
  6. Allow to cool slightly before spreading peanut butter on one cookie half and topping it with jam. Place another cookie on top to form a sandwich.
