  • 200g fresh salmon fillet
  • 1 ripe avocado, sliced
  • 1 medium cucumber, sliced
  • 2 tablespoons sriracha (for spicy mayo)
  • 2 tablespoons mayonnaise
  • 1 tablespoon soy sauce
  • 1 teaspoon honey (or agave)
  • 1 tablespoon sesame seeds (for garnish)
  • 2 green onions, chopped (for garnish)

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. Cook according to package instructions, then fluff and let cool.
  2. In a bowl, combine soy sauce, sriracha, and honey; marinate the salmon fillet in this mixture for 15 minutes.
  3. Heat oil in a non-stick skillet over medium-high heat. Sear the salmon skin-side down for about 4-5 minutes until crispy; flip and cook until fully done.
  4. Slice the avocado and cucumber into bite-sized pieces.
  5. Assemble your bowl by layering sushi rice at the bottom, followed by sliced salmon, avocado, and cucumber.
  6. Drizzle with spicy mayo and sprinkle with sesame seeds and green onions before serving.
