  • 4 cups mixed greens (romaine, spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumbers, diced
  • 1/2 cup red onion, finely chopped
  • 1 cup bell peppers (red and yellow), diced
  • 8 oz turkey or chicken breast, sliced
  • 4 oz provolone cheese, cubed
  • 1/2 cup mixed olives (green and black), pitted
  • 1/3 cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients and wash the mixed greens.
  2. Chop the vegetables: dice cucumbers, halve cherry tomatoes, and chop bell peppers and red onions.
  3. In a large bowl, combine mixed greens, veggies, turkey or chicken slices, provolone cheese cubes, and olives.
  4. In a small bowl or jar, whisk together olive oil, red wine vinegar, garlic powder, oregano, salt, and pepper until well combined.
  5. Drizzle dressing over salad just before serving; toss gently to coat all ingredients evenly.
